Tabasco Quinoa Chicken Bake


1 cup quinoa
2 cups shredded cheese, divided
½ cup refried beans
1 ½ cup crushed tomatoes
1 cup shredded chicken
1 Tablespoon Original Tabasco
Kosher salt and pepper to taste
Finely chopped scallions as needed


1- Preheat the oven to 375 degrees F.

2- Cook the quinoa according to the package directions. Once cooked, remove from heat and transfer the cooked quinoa into a large bowl.

3- Fold in 1 1/2 cups of the shredded cheese, refried beans, crushed tomatoes, shredded chicken and the Tabasco. Season the entire mixture with salt and pepper and stir to combine.

4- Lightly spray a medium sized baking dish with non-stick spray, and transfer the mixture into the baking dish. Top with the remaining shredded cheese and bake for about 20 -25 minutes until the top layer of cheese is bubbly and melted.

5- Remove the baking dish from the oven and garnish with green onions and serve.
